How to Pickle Onions

Perfect your pickling!

It's never been easier to pickle the perfect onion using our super simple pickling recipe. Here on farm we have 90 years experience growing and pickling our own pickling onions and shallots using this recipe so hopefully you'll have the same success with it as we do. 


You Will Need:

750g onions or shallots, peeled

40g salt 

750ml malt vinegar or spiced vinegar

60g dark brown sugar (optional)

2 glass jars (around 500ml each)


  1. Place your peeled onions in a bowl, sprinkle over the salt and leave covered for 24 hours. This process helps them stay crunchy.
  2. The next day heat the vinegar until simmering (do not boil), add sugar if using and simmer gently for 10 minutes.
  3. Rinse your onions, dry with kitchen paper and spoon into sterilised jars. If you made your own spiced vinegar and have any leftover spices, you can add them at this stage if desired.
  4. Pour the hot vinegar into the jars, making sure your onions are completely covered. Leave to cool then screw lids on tightly and leave for at least 2-3 weeks before using. Store in the fridge after opening.
